MICROGREENS / STRAWBERRY GASTRONOMIC TRANSFORMATION IN THE DIET OF CHILDREN

About Solution

This Project, which intends to contribute to the problem of hunger in Bogotá, is a joint proposal by the Department of Gastronomy of San Mateo University Foundation and the Fuente de Vida Fundation. Together, these organizations are endeavoring, along with the “Zero Hunger” program, to fight hunger among children in the Cazucá – Soacha sector of Metropolitan Bogotá.

Therefore, a proposal is generated from the gastronomic area for the transformation of foods such as microgreens and strawberries with high nutritional content. Strategies are established that allow these products to be incorporated into the diet of children under 5 years of age, improving the quality of life for the whole family.

With this, the teaching of the culture and transformation processes for the generation of a food diet and its incorporation as a component within the diverse cultures of the locality is established to the community. Being mediators of the health of infants, and the development of crops as part of the project's self-sustainability. Similarly, information will be provided to government control entities and those that regulate the care of infant nutrition such as the Colombian Family Welfare Institute (ICBF).

During the last seven years Colombia has been going through various socio-political situations such as the signing of the peace agreement with its implications and the strong crisis of the population Venezuela, increasing the phenomenon of migration due to the economic situation in the country , it has been turning the national territory into a country of refugees reaching ceilings in the crisis, generating dynamics of sustainability of the country's internal systems in check, the demand for access to services such as; health, education, housing and related services such as water, sanitation and social protection, as well as the existing supply in the labor market are affected; Given this situation, the national government has a greater demand for the provision of services, a greater integration among the governing bodies of attention and articulation of these.
